Meen kazhambu / South indian fish curry

Fish Curry is so easy to make and so tasty to eat. There are many different ways to cook , hereby my favourite.

Ingredients :

3 Fish fillets ( I use Haddock or Lemon Sole,  but you can use any salt water fish without skin)
1 full Teaspoon of Tamarind concentrate (put in a glass of warm water to dissolve)
1 Teaspoon MDH Fish Curry Masala (this is a substitute to Vadagam which you can't buy in Europe, if you have Vadagam, use it instead of Fish Curry Masala)
1 Teaspoon Fenugreek seeds
1 Teaspoon Mustard seeds
1 Teaspoon Cumin seeds
15 fresh Curry leaves
5dl of water
4 Garlic pods (mashed)
2 big Onions, chopped into small pieces
2 ripe Tomatoes, chopped into chunks
1 Teaspoon Chilli Powder
1/2 Teaspoon Turmeric/Kurkuma Powder
Salt
Some Coriander leaves (if you like)
3 Tablespoons Oil

  
Tamarind concentrate

MDH Fish Curry Masala which I use















Preparation:
  
Wash the fish and keep the fillets aside, dissolve the tamarind in a glass of warm water

Heat a non-stick pan and add fenugreek seeds, Cumin seeds, mustard seeds

Once fenugreek seeds are light brown, add garlic and curry leaves


After few seconds, add the onions and fry until golden brown






Add the tomatoes and fry until tomatoe are mashed





















Add the Chilli, turmeric/kurkuma, fish masala and salt

Add the tamarind water and after few seconds the additional 5dl of water





















Cook the gravy for 10 minutes in medium flame





Now add the fish and cook until fish is done (app. 5 minutes)

Fish curry is at its best after half a day as the spices evolve in the curry, you can easily keep it in the fridge. Serve with boiled rice, salads and fish fry.

Fish Fry / South Indian Style

My husband and I we both love fish - especially hot and spicy. This is a very easy recipe best in combination with rice, salads or fish curry (meen kozhumbe). 

Ingredients:

4 Fish Filets (skinless, cut each fillet into 3 pieces, I usually use Haddock or Lemon Sole but it's totally up to your liking)
2 Tablespoons Ginger/Garlic Paste
1/2 Teaspoon Kurkuma/Turmeric
1 Tablespoon Fish Masala (preferrabaly MDH)
1/2 Tablespoon Red Chilli Powder
1 Teaspoon Cumin Powder
1 Teaspoon Coriander Powder
Few Curry or Coriander Leaves (only if you like  greens, you can also prepare without it)
3 Tablespoons Oil
Salt


This is the Masala I usually use















Preparation:

Cut the coriander or curry leaves into very small pieces and keep aside

Put all ingredients together (except Fish and leaves) and mix it properly



Masala paste to be applied on fish






















Once you mixed it, try a little bit and check if spicy/salty enough

Rub the mixture on the fish evenly. Sprinkle coriander or curry leaves over all the pieces and put into the fridge. If possible, let it marinate for an hour.



Before you start frying the fish, makes sure you take it out of the fridge 30 minutes before.

  
Heat the oil in a non-stick frying pan. Fry one fish piece until brown on each side. Taste it and check if Masala/Salt is correct. If not, put a bit of salt and chilli over the marinated fish. If correct, fry all the fish pieces until brown.

Cut some onion rings and a lime for serving. Enjoy ;-)

Tomato Rasam

If you come across South Indian Cuisine, Rasam is probably the first dish you get to know. Usually eaten with rice, I also enjoy it as a soup... It is healthy, delicious and a boost for the metabolism.

Ingredients:

2 ripe Tomatoes
1 Tablespoon Tomato Puree
1 Teaspoon Pepper corns
1.5 Teaspoon whole Cumin
0.5 Teaspoon Mustard seeds
2 Tablespoon Tamarind concentrate
1 Teaspoon Salt
a pinch Asafoetida
10 Curry Leaves fresh
a few Coriander Leaves (if you like)
1 Teaspoon Ghee or Olive Oil (for healthier option)

Preparation:

Cut the tomatoes into big chunks, grind them together with Tamarind and Salt until juicy.

Make and grind Pepper and Cumin into a coarse powder (if you don't have whole spices, you can also mix pepper and cumin powder together)

Heat oil or ghee in a non stick pan, add mustard seeds, Asafoetida and Curry leaves until it splutters. Add pepper/cumin and fry for few seconds. Add the tomato/tamarind juice and fry for 3 minutes. Add half a liter of water, the tomato puree and let it boil for 5 minutes, if needed add extra water and salt.

Put some coriander leaves if you like for garnishing.

Enjoy hot!

Ice Age 4 - Continental Drift

Went into Ice Age with a lot of expectations of the flick as the past 3 movies were always up to the mark. Well, we had a constant smile and laughed out few times. Sid's Granny is amazing and even on our way home we kept on talking and were really happy about the movie. Comedy is great, the new characters such as the Granny or the guinea pigs spice up the movie. And of course, our squirrel is as its best performance chasing the ultimate nut. They insert the squirrel scenes smartly and fit into the story.
The movie is great for the whole family and worth watching, meeting all the old Ice Age friends again. Must say that the story line is predictible and have seen it many times.

Movies and Series

I am a movie buff and enjoying going to the cinema as often as possible. I'm also one of those who can watch 2 or 3 movies in a row and take all out of it. I watch any kind of movie, preferrably though Comedy, Thriller and Suspence. I adore watching series as well. In my blog, I'd like to give a rating and personal opinion about the latest films and series.
