Tomato Rasam

If you come across South Indian Cuisine, Rasam is probably the first dish you get to know. Usually eaten with rice, I also enjoy it as a soup... It is healthy, delicious and a boost for the metabolism.

Ingredients:

2 ripe Tomatoes
1 Tablespoon Tomato Puree
1 Teaspoon Pepper corns
1.5 Teaspoon whole Cumin
0.5 Teaspoon Mustard seeds
2 Tablespoon Tamarind concentrate
1 Teaspoon Salt
a pinch Asafoetida
10 Curry Leaves fresh
a few Coriander Leaves (if you like)
1 Teaspoon Ghee or Olive Oil (for healthier option)

Preparation:

Cut the tomatoes into big chunks, grind them together with Tamarind and Salt until juicy.

Make and grind Pepper and Cumin into a coarse powder (if you don't have whole spices, you can also mix pepper and cumin powder together)

Heat oil or ghee in a non stick pan, add mustard seeds, Asafoetida and Curry leaves until it splutters. Add pepper/cumin and fry for few seconds. Add the tomato/tamarind juice and fry for 3 minutes. Add half a liter of water, the tomato puree and let it boil for 5 minutes, if needed add extra water and salt.

Put some coriander leaves if you like for garnishing.

Enjoy hot!
